In contrast, the injection of seasoning marinade improves the flavour of the fish. This method requires only a small amount of seasoning. Flavours can be further harmonised, for example by tumbling under cold and vacuum. This process also makes the fish uniformly tender. Even the weight of fish can be increased by carefully controlled tumbling that ensures the weight increase will remain temperature-stable.
